Hope this is the right part of the forum for this. Where does Applestones Cider come from, I can find nothing on the web about them. It's as good a part of the Forum as any - although I would have suggested starting a new thread with this, as it is a new question. Your problem is that Applestones Cider doesn't exist (as far as I know) - I think you are looking for Addlestones Cider ( www.addlestones.co.uk). That is a 'keg scrumpy' (if such a thing exists) produced by Gaymers ( www.somersetmade.co.uk/oldscrump/ciderfarms/gaymer.php). Although I am not a fan of mass-produced ciders, I will admit to rather liking Addlestones Cider. And if you can't get the real stuff, it makes a half-decent back-up option. Addlestones - now that brings back some memories... A few years ago, when I was a student in Bristol, a friend and I went into the ?? pub in Clifton Village (?), and found they were doing an Addlestones promotion. 'All' you had to do was drink ?? pints of cider over the month of the promotion and you got a free Addlestones t-shirt. We spent ?? hours there, drinking ?? pints. Next morning I woke up on the sofa at my friend's house with a horrible hangover, wearing my Addlestones t-shirt; my friend woke up on his bed (not *in* it, of course!) wearing his. Most of the rest of the details of the night ellude me... PS Old Scrump's Cider House urge their readers to drink responsibly at all times!

Frank, I wonder if you can help me I have 72 gallons of cider in carboys. It is very bitter. How can I sweeten it? Or should I leave it for a second fermentation when the temperature rises. It has never been filtered since being placed in the carboys last October.
