End users need only use a few drops in ordinary water to reconstitute the cider to the original farmhouse brew. Developed in response to high shipping costs for liquids, CiderPunk.com hope that their technology investment will now allow them to get their product to consumers in a friction-free way.
The process is secret and the subject of a patent application, but it is known as "dropping", and involves the use of nitrogen gas, along with a platinum fixer. Development of the process took over 3 years and was headed up by Professor Morgan Sweet, head of the Materials Science laboratory at MIT. This investment in research and development underlines the intent of the management of CiderPunk.com to make themselves the leading distributor of farmhouse cider in Europe.
"What it means for us is simply easier access to customers," Richard Higgs of CiderPunk.com said, "high shipping costs have been our biggest problem and now we can simply wipe these out at a stroke". On his farm in Mudgley, Somerset, Roger Wilkins, whose cider is the first to be applied to this new process, said of the results, "he tastes exactly like the real thing. Of his successful formulation of the process, Professor Sweet said, "it's a fantastic achievement for the Mark Institute and it couldn't have been done without the help of my colleague Tom Putt, who worked out the precise nitrogen to platinum ratio".
