My local cider supplier in Somerset had the bung out the top of the barrel that my tubs were filled from.
Now I know once you have your cider home you should keep its exposure to air to a minimum, so is there a difference when the cider is in the barrel?
I have also been to some cider farms where they pull the bung out so that it pours quicker.
All the cider taste fine, but any help with my query would set my mind at ease.
