Can anyone PLEASE tell me if you can make cider from juice produced from a steam juicer or does it have to be pressed or mechanically juiced ? Paul

You can certainly make cider from steam-juiced apples. But you will have to add yeast, because steam-juicing results in pasteurized juice.
I just made 26 litres of cider from 13 litres of commercial pasteurized organic apple juice and 13 litres of steam-juiced blackberry juice, from our own blackberries. I simply put it in a carboy, pitched a packet of Lalvin EC-1118, and put a gas trap on top.
When it quit bubbling, I tasted it and it was quite harsh. I then added 250cc of whey from making raw (non-pasteurized) cheese, to do the malic-lactic acid thing, and then added a teasthingy of organic sugar to each Grolsch bottle, then filled them and set them aside for three months.
Still came out still pretty tart, but more "buttery," and with some good carbonation!
