Hi Guys - If possible could anyone offer me some advice please? I have started a batch of "Real Cider" from juice I have pressed, i added 1 campden tablet to each demijohn (2x DJ's) and a tsp of Pectalose to each DJ - I intend to leave it for 24 hrs before pitching the yeast but I have notice a large amount of sediment already has settled out. The juice taste good with and SG of 1044 and Ph of 3.3 - my question is should I rack off the sediment before pitching the yeast in? Many thanks PS sorry if its in the wrong forum.
